About This Recipe

Mee Rebus is a comforting noodle dish served with a rich, savoury gravy and simple toppings. This lighter version uses sweet potato to give the gravy natural body, keeps added oil modest and combines noodles with tofu, egg, bean sprouts and fresh garnishes for a more balanced meal.

Ingredients

For the Noodles

  • 400 g fresh yellow noodles
  • 1 cup bean sprouts
  • 200 g firm tofu, cubed
  • 2 hard-boiled eggs, halved
  • 1 small tomato, diced

For the Gravy

  • 1 medium sweet potato, peeled and cubed
  • 1 small onion, chopped
  • 2 garlic cloves
  • 1 teaspoon fresh ginger
  • 1 tablespoon curry powder
  • ½ teaspoon turmeric powder
  • 1 tablespoon cooking oil
  • 750 ml low-sodium vegetable stock
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon tamarind paste
  • ½ teaspoon brown sugar, optional
  • Black pepper to taste

To Serve

  • 2 tablespoons chopped spring onion
  • 1 small red chilli, sliced, optional
  • 1 lime, cut into wedges
  • Extra bean sprouts or leafy vegetables, optional

Keep the noodle portion sensible and add extra bean sprouts or vegetables if you want a larger bowl. Reduced-sodium stock and soy sauce can also help keep the overall sodium level lower.

Method

Cook the Sweet Potato

Boil the sweet potato for about 10–12 minutes, or until completely soft. Drain and mash until smooth.

Prepare the Aromatics

Blend or finely chop the onion, garlic and ginger until they form a coarse paste.

Build the Gravy

Heat the oil over medium heat. Add the aromatic paste and cook for 2–3 minutes. Stir in the curry powder and turmeric until fragrant.

Add the Sweet Potato

Stir in the mashed sweet potato, then gradually add the vegetable stock while stirring to create a smooth gravy.

Season and Simmer

Add the soy sauce, tamarind paste, optional brown sugar and black pepper. Simmer gently for 8–10 minutes until slightly thickened.

Prepare the Noodles and Tofu

Blanch the noodles and bean sprouts briefly in hot water. Lightly pan-sear the tofu in a non-stick pan until golden.

Divide the noodles between bowls. Add bean sprouts and tofu, spoon over the warm gravy, then top with egg, tomato, spring onion, chilli and a lime wedge.
