About This Recipe

Steaming keeps the chicken tender without requiring much added oil. Mushrooms, ginger and garlic bring savoury depth and aroma, while a light reduced-sodium sauce keeps the dish suitable for an easy everyday lunch or dinner.

For the Chicken

  • 450 g skinless chicken breast or thigh, sliced
  • 1 teaspoon reduced-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • ½ teaspoon black pepper

For the Mushrooms

  • 150 g fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely sliced
  • 2 spring onions, sliced
  • ½ small carrot, thinly sliced

For the Light Sauce

  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon oyster sauce
  • 2 tablespoons water
  • 1 teaspoon lime juice or rice vinegar

Use skinless chicken and plenty of mushrooms to keep the dish satisfying without relying on a heavy sauce. Steaming also means very little added oil is needed.

Method

Season the Chicken

Combine the chicken with soy sauce, sesame oil, cornstarch and black pepper. Leave for about 10 minutes.

Prepare the Vegetables

Slice the mushrooms, ginger, spring onions and carrot. Arrange the chicken in a heatproof steaming dish.

Add the Mushrooms

Scatter the mushrooms, garlic, ginger and carrot over the chicken. Mix the light sauce ingredients and pour evenly over the dish.

Steam

Steam over simmering water for about 18–20 minutes, or until the chicken is fully cooked and the mushrooms are tender.

Finish and Serve

Sprinkle with spring onion and serve warm with vegetables and a moderate portion of rice if desired.
