About This Recipe

Tuna sandwiches are quick, affordable and easy to prepare. This version keeps the filling lighter by using plain yogurt with only a small amount of mayonnaise, while cucumber, carrot and lettuce add freshness and crunch. It works well as a simple lunch or packed meal.

Method

Prepare the Tuna Filling

Place the drained tuna in a bowl. Add the yogurt, mayonnaise, lime or lemon juice, spring onion and black pepper. Mix gently until combined.

Wash and slice the cucumber and tomato, grate the carrot and pat the lettuce dry.

Place lettuce on two slices of bread. Add the tuna filling, cucumber, carrot and tomato, then top with the remaining bread slices.
