Chicken Soto is a warm, aromatic soup built around chicken, turmeric, ginger and fresh herbs. This version keeps the broth light while adding more vegetables for colour, fibre and volume.
It can be enjoyed on its own or served with a small amount of rice, noodles or potato depending on how filling you want the meal.
Cut the chicken and vegetables into bite-sized pieces. Prepare the garlic, onion, ginger and herbs.
Heat the oil in a large pot. Add the onion, garlic and ginger and cook for about 2 minutes until fragrant.
Stir in the turmeric, coriander and cumin. Cook for around 30 seconds while stirring.
