About This Recipe

Chicken soto is a comforting soup built around aromatic spices, tender chicken and a warm savoury broth. This version adds vegetables and keeps the broth light, making it suitable as a filling meal without relying on heavy coconut-based ingredients or excessive oil.

Ingredients

For the Chicken & Broth

  • 400 g skinless chicken breast or thigh
  • 1.2 litres water or low-sodium chicken stock
  • 1 tablespoon cooking oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon fresh ginger, grated
  • 1 stalk lemongrass, lightly crushed
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground coriander
  • Black pepper to taste

Vegetables & Extras

  • 1 medium carrot, thinly sliced
  • 1 cup shredded cabbage
  • 1 cup bean sprouts
  • 2 spring onions, sliced
  • 1 small tomato, cut into wedges
  • 100 g rice vermicelli, optional
  • 2 boiled eggs, halved, optional

To Serve

  • Fresh lime wedges
  • Chopped coriander or celery leaves
  • Sliced chilli, optional
  • Extra bean sprouts, if preferred

Use skinless chicken and a reduced-sodium stock, then build flavour with ginger, garlic, lemongrass, turmeric and lime. Adding extra vegetables can make the soup more filling without making the broth heavy.

Method

Prepare the Aromatics

Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, lemongrass, turmeric and coriander. Cook for 2–3 minutes until fragrant.

Cook the Chicken

Add the chicken and stock or water. Bring to a gentle boil, then reduce the heat and simmer for about 18–20 minutes, or until the chicken is fully cooked.

Shred the Chicken

Remove the cooked chicken from the pot and allow it to cool slightly. Shred it into bite-sized pieces, then return it to the broth.

Add the Vegetables

Add the carrot and cabbage and simmer for about 5 minutes. Add the bean sprouts and tomato near the end so they retain some freshness and texture.

Prepare the Noodles

If using rice vermicelli, prepare it according to the package instructions and divide it between serving bowls.

Ladle the hot chicken soto and vegetables into bowls. Top with spring onion, fresh herbs and optional boiled egg. Serve with lime wedges and chilli if desired.
