About This Recipe

Fresh ginger gives this chicken dish a warm, aromatic flavour without needing a heavy sauce. Colourful vegetables add texture, fibre and volume, while a small amount of oil and reduced-sodium soy sauce keeps the preparation simple and suitable for an everyday lunch or dinner.

🧺

Ingredients

For the Chicken

  • 300 g skinless chicken breast or thigh
  • 1 teaspoon ground turmeric
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon lime juice
  • 1 teaspoon reduced-sodium soy sauce
  • 1 teaspoon cooking oil
  • ½ teaspoon black pepper

For the Vegetables

  • 1 cup cucumber slices
  • 1 small tomato, sliced
  • 1 cup blanched long beans or bok choy
  • ½ small carrot, sliced

To Serve

  • White rice, in a moderate portion
  • Fresh lime wedges
  • Spring onion or coriander
  • Sliced chilli, optional

🌿 Healthy Tip

Use skinless chicken and keep the oil to a minimum. Pair the chicken with plenty of vegetables and a sensible portion of rice to create a balanced plate without removing familiar everyday foods.

🍳

Method

1
Prepare the Marinade

Mix the turmeric, garlic, ginger, lime juice, soy sauce, oil and black pepper in a bowl.

2
Marinate the Chicken

Coat the chicken evenly with the marinade and leave it for at least 15 minutes. For stronger flavour, refrigerate it for up to a few hours before cooking.

3
Grill the Chicken

Heat a grill, grill pan or non-stick pan over medium heat. Cook the chicken for about 7–9 minutes per side, depending on thickness, until fully cooked and lightly charred.

4
Prepare the Vegetables

Slice the cucumber, tomato and carrot. Blanch the long beans or bok choy until just tender.

5
Serve

Slice the cooked chicken and serve with the vegetables, a moderate portion of rice and fresh lime wedges.
